My wife missed out on some of our favorite fried chicken this week. So, I decided to try to make a point friendly version of "fried" chicken. It turned out to be crispy, juicy, savory and delicious. There are kind of a lot of steps, but it really is easy to throw together. Another side note: the chicken breasts I used were pretty huge. You might be able to get away with coating two pieces of chicken with one bag of potato sticks if you use regular sized pieces of chicken.
Here is the crushed WW Mac & Cheese potato sticks. Those big chunks stuck right to the chicken and ended up getting nice and crispy. :)
