Hello everyone. I hope everyone is doing well. With everything going on these days, it has been a little challenging to find some of my usual foods. Surprisingly, one of the most difficult things to find was my usual one-point-per-slice sandwich bread. So I took to scouring the internet to see if I could find a homemade alternative.
Most of the recipes I found called for a lot of butter and milk. I know I could have lightened them up, but it was still not quite what I was looking for. Eventually, I found a simple recipe that was just water, flour, salt, yeast and a little sugar. That is just what I was after.

Notice all of the little bubbles as the yeast does its work. The dough ferments a little during the first rise, which gives it a great flavor.

Now that you have this beautiful loaf of bread, how in the world do you cut uniform pieces??? Thankfully, someone has already solved this problem. I have been using the smallest setting. The slice may seem a little thin, but it is hearty enough to stand up to a normal sandwich.
Some Tips:
I would recommend using bread flour. that will made for a better finished product.
I use non-stick spray instead of butter to grease the loaf pan. If you go with non-stick spray, make sure you get full coverage on the pan.
I've been storing my bread in the refrigerator. After cutting a couple pieces off, microwave them for 10 seconds.
