Citrus-Braised Chicken Thighs - 3 sp

So, I got inspired by of my favorite pork recipes and decided to find a version with chicken that we could eat throughout the week. Well, not to brag, but it came out freaking delicious! I will definitely be making it again.




Citrus braised chicken thighs

Yields 16 servings for 3 SP per serving

NOTES

So what do I do with the remaining braising liquid????

  • Add some corn starch to it to thicken it up.  it makes an amazing gravy!


What do I do with all of that chicken???

  • wrap it up in some tortillas and make tacos

  • serve it over some tortilla chips for nachos

  • serve it over pasta w/ some fresh veggies

  • wrap it in some egg roll wrappers with fresh veggies and make egg rolls

  • make a sandwich

  • add it to your favorite soup

  • just eat it plain with some of your favorite sides

It tastes even better the second and third day, so this is kind of ideal for a week long meal prep.


Add some additional seasonings to change it up (we added a little Honey Teriyaki sauce and stir-fried it with some 0 SP Weight Watchers noodles)
